New foodie-alert!!!

“New foodie-alert! A cosy & contemporary fusion-bistro in a quiet neighbourhood that is sure to become a favourite. 2nd time here and I’m already in love with the garden atrium ambience. Perfect for date-night! Impressed by the comfortable atmosphere, the consistent quality of food and friendly, caring service. Price super reasonable for complex menu.

What we had:

-Jerusalem artichoke in champagne sauce with shallot oil.

- Kimchi Arancini with gochujang mayo.

- Steak tartare with crispy seaweed crackers, sesame, baby shiso herb.

- Makgeoli fried chicken.

- Swordfish with fennel, artichoke, orange salad, bonito vinagrette.

- Lychee Spritz (signature cocktail)

- Kimchi Margie (signature cocktail)

- Mandarino (mocktail)

- In The Green - cucumber, mint, lime (mocktail)

- Tiramisu with dalgona

- Banana pannacotta with coconut

Everything was well-balanced and well thought-out. A truly harmonious blend of flavours that brought out the best in all the ingredients. A food-lover’s dream!

Highlights for me were the Jerusalem artichoke in champagne sauce. I couldn’t get enough of it. Swordfish was tender and perfectly cooked. Chicken was crispy yet tender, banana pannacotta light and more-ish. My mocktails were exceptional. It’s hard to do a good mocktail without it veering into kid’s juice, but these are mature, refreshing and satisfying for the experienced tee-totaller like me.

A talented and passionate young team, backed by a dedicated owner; The Evergreen is authentic, delicious, elevated modern-Korean fusion. What I love about this place is that their fusion is full of discerning flavours that work incredibly well to delight the diner. It never strays from or competes with the classics, but reinvigorates them.

Chef Jun Hwang expertly uses Korean staples to bring new life to an elevated gastro-pub menu at reasonable prices. Smooth, well-balanced flavours. These are thoughtful combinations, contrasting textures that wet the palate - all working in harmony to make for a sensory experience.

Bar Manager, Maureen Er has created a beverage menu that crafts East Asian and Korean traditional flavours into signature cocktails like kimchi into margarita, lychee makgeoli spritz. Delightful takes on classics, not just for the reference, but truly considered additions that complement original flavours. And the best complement a fellow Asian can give? “Not too sweet”. :)

Why do I love the fusion here? Mainly because Sydney’s fusion can miss the mark and be self-indulgent experiments by ignorant chefs. It can be about playing with whatever “on-trend cultural food” as an “extra” component without truly understanding the vast range of flavours or complexities of those staples. Fusion can be a lazy way to be different. A trendy, shallow mash-up of stereotypes without deeper knowledge of how to prepare, match or complement, disrespecting the very culinary traditions it takes from.

So that’s why I am so happy that The Evergreen is EXCEPTIONAL. They’re showing Sydney how GOOD fusion can be elevated and consistently delicious. Quality, knowledge, experience and passion is all here, and for the long-term.

Chef Hwang is of Korean heritage, trained in Europe, Australia and is a massive global foodie. Hwang knows his stuff and his kitchen team are pros. Future classics on this menu.

Miss Er hails from Singapore, and worked at some of the best establishments with an international crowd. Personally tapped to come to Sydney 5 yrs ago, building a reputation & bringing global experience to team here.

Front-of-house manager, Jacob, has worked for years at local favourite, JooMak. The Evergreen’s owner is Anna Song, who also owns JooMak. And if you know JooMak, you know it’s all about food, consistency and customers. The team here brings their passion, heart and focus on service.

Great vibe!

“It’s so unique Korean fusion restaurant that I have never been in Sydney. Lovely and cozy place to drink. Great vibe!!

I tried kimch arancini, steak tartare and gnocchi. All dishes are awesome.

Tiramisu and banana pudding is so yummy. Mandarin highball is fantastic.

It’s enough worth to visit again soon.”

Awesome new fusion

“Awesome new fusion restaurant in Chatswood with a great cafe vibe during the day and a sophisticated dinner menu making it the perfect spot for any meal.

Went there for dinner and the dishes were outstanding, with complex flavours that blended perfectly, and well added korean twists to make every dish that much more enjoyable. In particular the steak tartare starter and the korean twist on gnocchi were amazing dishes that felt as if they belonged in a fine dining city restaurant.

The cocktail selection is also incredible, our table ordering their signsture cocktails, with interesting Korean twists like the lychee spritz.

Everything is well priced and the vibe of the restaurant is awesome, with lots of elegant lighting complimenting cool greenery to transport you out of chatswood to a themed venue that elevates the dining experience. The staff are very friendly too, 10/10 would recommend eating here.”

Delicious food

"This fusion korean restaurant is everything!!! Went there for dinner and I was so surprised to experience high quality, unique and genuinely DELICIOUS food that you would typically need to travel into the city for, at really reasonable prices.

The stars of the night were definitely the steak tartare, korean-style gnocchi, bbq platter and octopus dish. And don’t forget the cocktails as well - we tried 3 and we had to keep swapping because we all loved all of them!

The tiramisu as well was really light and fluffy. Im not normally a fan of tiramisu but this is one I would come back for. Really wished I could’ve tried the banana pannacotta but by the end of the night we were sooo full.

The restaurant has really convenient parking in The Mix carpark, and the decorations and atmosphere are stunning and would be perfect for a date night or fun night out with friends. Will definitely come back again soon and try out the lunch menu too!"

Cooked to perfection

“A wonderful new addition to Chatswood Place, serving a unique blend of traditional and modern food to suit all tastes.

Personal favourites included the gnocchi dish and BBQ meat platter, the latter being cooked to perfection.

Prices are very reasonable and the wait staff were all so friendly. I'd recommend checking out The Evergreen as soon as possible and wouldn't be surprised if it becomes a regular visit for many of the locals.
